Originating in the Mediterranean, Thyme has over fifty varieties. Use sparingly to avoid the high tannin content becoming bitter. The subtle, sweet flavour blends well with most vegetables, grains and beans, especially courgettes, aubergines and peppers. Add at the start of cooking for best flavour.
